Braised Kale
Very fast and easy way to cook kale.

Ingredients
  1. 1 tablespoon olive oil
  2. 1 1/2 cups thinly sliced onion
  3. 1/3 cup thinly sliced garlic
  4. 10 cup loosely packed chopped kale (about 2 pounds)
  5. 1 cup chicken broth, vegetable or beef broth
  6. 1 cup water
  7. 3/4 teaspoon crushed red pepper
  8. 2 teaspoons red wine vinegar
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon black pepper
Instructions
  1. 1. Heat olive oil in a Dutch oven over medium heat.
  2. Add onion and garlic;
  3. cook 10 minutes or until golden, stirring frequently.
  4. Add kale, broth, 1 cup water, and red pepper;
  5. cover and bring to a boil. Reduce heat, and simmer 20 minutes.
  6. Stir in vinegar, salt, and black pepper.
  7. Serve
Notes
  1. Can be frozen for later use in soups. Great way to store kale.
