Ingredients
  1. 2 Medium Zucchini
  2. 2 Medium Yellow Squash
  3. 1 Cup Butternut Squash
  4. 2-3 Carrots
  5. Optional - Green & Red Pepper
  6. Cup Italian Bread Crumbs (plain if you prefer)
  7. Cup Parmesan Cheese Grated
  8. 2 Tblsp Extra Virgin Olive Oil Mix to With Bread Crumbs
  9. 2 Tblsp Olive Oil to Toss With Veggies
  10. 1 Clove Garlic Chopped
  11. Salt and Pepper
  12. 1 Tsp Thyme
  13. 1 Small Onion
Instructions
  1. Slice all the veggies about the same size. Put them in a casserole dish.
  2. Toss with olive oil and sprinkle with salt & pepper.
  3. Mix bread crumbs, olive oil and garlic. Mix 1/3; of mixture in with veggies and sprinkle the rest on top.
  4. Sprinkle thyme over top and a little more parmesan (optional).
  5. Bake 350 degrees uncovered 20-30 minutes till tender and top is lightly browned.
