Refrigerator Pickles

Ingredients
  1. I don’t always use all the pickling spice but I use all the garlic or more.
  2. 8 1/4 cups cukes sliced
  3. 2 cups white vinegar
  4. 2 cups water
  5. 6 tbsp pickling or canning salt
  6. 1/4 cup sugar
  7. 2 tbsp pickling spice
  8. 7 1/2 tsp dill seeds or bunch of fresh
  9. 5 tsp mustard seed
  10. 1 1/4 tsp whole black peppercorns
  11. 5 garlic cloves cut in half
Instructions
  1. 1. Place cuke slices in a large glass or stainless steel bowl. Set aside.
  2. 2. In medium stainless steel saucepan, combine vinegar, water, pickling
  3. salt, sugar, and pickling spice. Bring to boil over med. heat, stirring
  4. to dissolve salt and sugar. Reduce heat, cover and boil gently for 10 min.
  5. 3. Pour pickling liquid over slices
  6. cukes. Cover with waxed paper and set aside until cooled to room temperature.
  7. 4. In each jar place 1 1/2 tsp dill, 1 tsp mustard seed, 1/4 tsp peppercorns and 2
  8. garlic cloves. Add cucumbers leave 1/2” space on top. Ladle in the liquid
  9. covering cukes, pack them in tight and cover completely. Put on lids and let
  10. marinate in refrigerator at least 2 weeks. Will last in refrigerator up to 6 months. Enjoy!
Notes
  1. I cut the cukes in spears but you could slice them any way you like.
