Creamy Butternut Squash Pasta Sauce

  1. 1 med. butternut squash ( about 2 cups)
  2. 3 tbsps olive oil
  3. 4-8 sage leaves
  4. 1 1/2 cups vegetable broth, chicken broth, or water
  5. 1/4 diced onion
  6. 4 cloves minced garlic
  7. 1/4 cup freshly grated parmesan cheese
  8. optional 1/8 tsp nutmeg
  9. salt and pepper to taste
  10. optional parsley and chive for garnish
  11. 12 to 16 oz. of pasta
  1. Bring large pot of water to boil. Salt water and add the squash. Cook until soft.
  2. While squash is cooking saute onions and garlic till soft. add sage stir.
  3. Add broth or water to pan, stir.
  4. When squash is done strain and add to blender or use hand held submersible blender.
  5. Add broth mixture to squash over low heat and stir in parmesan cheese.
  6. Serve over pasta with optional garnish
