Baby Greens grown in small cells

I just love greens!  Lately i have realized that i love eating baby greens more than the full size greens.

I don’t mean microgreens.  I mean baby as in when they are 3-6″ tall.  I eat them with everything.  I add them to ramen bowls, rice, eggs, noodles.  Most of the time i do not cook them when i add them.  sometimes I do eat them as a sald with a little olive oil and vinagar.

No matter how i eat them I want them all year!  When it is too hot i grow them inside with lights or a sunny window.  But most all year they do fine outside with indirect light, like on the porch or on a table under a roof where they get light from all sides.

For growing them as baby greens I start with organic potting soil and you can use small 2-4″ pots, a large tray, a large pot, or in a raised bed or garden.  Since i want them all year i mostly use a large tray or small pots.  If you do grow them in the garden or raised bed, you can cut them for baby greens at first when about 4-6″ tall for as long as you want.  You can then let them grow to full size.

When growing for baby greens space them close, 2-4″ apart.  When they reach about 4″ start harvesting the outside leaves .  Always leave the middle and they will re grow.  They can be cut many times over and over.  Fertilize with liquid such as fish/kelp every 4 weeks to give them a boost to re grow.  They can also be transplanted to garden or large pot later to let them grow to full size.

To grow them full size space about 12″ apart to give them room to mature.  You can harvest the whole plant leaving only the middle third of leaves so it will continue to grow.  Specific plant sizes are on each seed pack for that type.

If you do not like kale or collard and those types when full grown, try them as baby greens you will probly love them as I do!  Added bonus is they so healthy and full of nutrients!
