Green Tomato Chow Chow

Ingredients
  1. 12 green tomatoes, cored and quartered
  2. 3 medium green bell peppers, seeded and chopped
  3. 3 medium red bell or other sweet peppers, seeded and chopped
  4. 3 medium yellow sweet peppers, seeded and chopped
  5. 3 medium onions, peeled and quartered
  6. 1 cup fresh jalapenos, stemmed and chopped
  7. 1 quart pickling liquid
  8. Pickling Liquid
  9. 3 cups distilled white vinegar
  10. 1 cup water
  11. 2 1/2 cups sugar
  12. 1/4 cup salt
  13. 1 1/2 tsp. celery seed
  14. 1 1/2 tsp. mustard seeds
  15. 1 1/2 tsp. whole black peppercorns
  16. Place all ingredients in saucepan over high heat. Bring to boil, reduce heat to medium and simmer 30 minutes. Cool completely then strain and use right away or store in airtight container.
Instructions
  1. In a food processor or blender pulse tomatoes about 10 times.
  2. Pour tomatoes in saucepan.
  3. Add peppers, onions and jalapeno to the blender and pulse 10 times.
  4. Add the mixture to the tomatoes.
  5. Stir in pickling liquid.
  6. Over high heat, bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Fill jars and process in hot water bath or refrigerate.
  9. Let age 2 weeks before using. (If you can)
Notes
  1. Great with chicken, fish, rice or on sandwiches.
